American Country Style Recipes
I know you are
thinking to yourself, what the heck are American Country Style
Recipes? Simply put, these recipes are handed down from the many
Dairy Farmers wives that live in the area that I live. Yeah, I live
smack dab in the upstate New York area about 250 miles north of New
York City.
This area is
primarily know for Dairy Farms and Cortland Apples as well as Maple
Syrup.
I have so many
recipes that were handed down from generation to generation.
They are all original family recipes and get
passed around at the many "Strawberry Socials", "Ice Cream Socials",
and "Traditional Country Dances", held at the small, local Fire
Departments that dot the country side.
I would like to pass along
some of these American Family Recipes on to you and to help keep
some old fashioned country cooking alive.
There are no pictures
available for any of these recipes but I know you are just going to
love some of this 'Down Home Cookin'.
SPOON BURGERS OR A BUN
1 medium chopped onion 1 stalk celery- chopped 1/2 medium green
pepper-chopped 1 tablespoon oil 1 Ib. ground beef 1/2 cup diced
cheddar cheese 8 oz tomato sauce 1 tablespoon vinegar 2 tablespoons
sugar 1 tsp salt 6-8 hamburger buns.
Sauté onion, celery, and pepper in oil
about 5 min. add beef; cook and stir until beef is browned. Stir in
cheese, sauce, vinegar, sugar , 2 tsp Worcestershire sauce, and
salt. Cover and let simmer 10 to 15 min.
PERNIR ( MARINATED PORK )
4 1/2 lbs. shoulder pork butt, salt and pepper to taste 3 cloves
freshly diced garlic 1 small finely chopped onion 1/4 cup vinegar
1/4 cup cooking oil 1 tablespoon Worcestershire sauce
Stab meat all over with a knife and rub above ingredients all
around and into meat. Better if marinated overnight. Bake at 375

Meatloaf
1 can tomatoes soup 1/4 cup water 1/2 tsp oregano 1 small clove
minced garlic 1 cup small bread crumbs 1/4 cup finely chopped onions
2 tablespoons chopped parsley 1 slightly beaten egg 1 tsp salt 1/8
tsp pepper 1lb. ground beef 2 slices mozzarella or American cheese
Blend soup, water, oregano and garlic. In a bowl combine 1/4 cup
soup mixture, bread onion parsley, egg, salt and pepper, mix
thoroughly with beef. Shape firmly into a loaf; place in shallow
baking pan. Bake at 350 for 1 hour and 15 minutes. Remove from oven;
spoon off fat, pour remaining soup over loaf. Top with cheese and
return to oven and bake until cheese is melted.
Cheese
Burger Pie
1lb. ground beef 1/2 cup evaporated milk 1/4 cup catsup 1/3 cup
fine bread crumbs 1/4 cup chopped onions 3/4 tsp salt 1/2 tsp
oregano 1/8 tsp pepper 1 cup shredded American cheese 1 tsp
Worcestershire sauce
Thoroughly combine ground beef, evaporated milk, catsup, bread
crumbs, onion, salt, pepper and oregano. Spread in unbaked pie
shell. Bake 35-40 minutes at 350. Toss together cheese and
Worcestershire sauce; spread on top of meat and bake ]0 minutes
more. Remove from oven and let stand ]0 minutes before serving.
Garnish with dill pickle slices.

MEATBALLS STROGANOFF
1 1/2lb. ground chuck 3/4 cup milk 3/4 cup package dried bread
crumbs salt and pepper to taste 3 tablespoons snipped parsley 1/4
cup butter 3/4 cups minced onions 1/2 lb. sliced mushrooms 3/4 tsp
paprika 4 tablespoons flour 1 can beef bouillon 1 can consume ( both
undiluted ) 1 tsp Worcestershire sauce 1 cup sour cream
Combine chuck, milk, bread crumbs, 1 1/2 tsp salt, 1/4 tsp pepper
and parsley. Shape into 1 1/4" meatballs; sauté in 2 tablespoons hot
butter in skillet until browned; remove and set aside.
Add 2 more tablespoons butter to skillet; in it sauté mushrooms
and onions with paprika until tender, about 5 minutes Sprinkle flour
over mushroom mixture; stir. Stir in bouillon and consume, 3/4 tsp
salt and 1/8 tsp pepper. Return meatballs to pan, simmer covered 10
minutes.
Just before serving, stir in Worcestershire and sour cream. Heat
but do not boil. Serve with hot rice, sprinkle with dill if desired.
Makes about 8 servings.
BEEF CHOWDER WESTERN STYLE
1lb. ground beef 1/3 cup chopped onions 2 tablespoons shortening
2-10 1/2 oz cans of cream of celery soup 1-1lb. can tomatoes 1
soup can of water 1 7 oz can corn 1 tsp salt 1/8 tsp thyme
Brown ground beef and onions in hot shortening. Add remaining
ingredients and simmer 20 minutes. Add more water if a thinner
chowder is desired.
SEVEN LAYER DINNER
1 cup uncooked rice 1 cup whole kernel corn 2 cans tomato sauce
3/4 of tomato sauce can of water 1/2 cup chopped onion 1/2 cup
chopped green pepper 3/4lb. ground chuck 3 slices bacon 1 cup
grated Cheddar cheese
Preheat oven to 350.
Place rice and corn in 2 quart baking dish, add one can tomato
sauce and 1/2 can water ov. over rice and corn, add onion, green
pepper and ground beef; pour in remaining tomato sauce and water.
Add salt and pepper to taste. Cover with bacon, sprinkle with
cheese, cover dish and bake one hour, uncover and continue baking
until bacon is brown.
HAMBURGER CASSEROLE
1lb. hamburger 2 medium onions 4 peeled potatoes 1 can cream of
mushroom soup salt and pepper to taste
Make hamburger patties and brown in small amount of grease. Lay
patties in bottom of kettle, then a layer of sliced onions then 1/2"
slices of potatoes on top, add mushroom soup and thin with 1/2 cup
water to cover potatoes. Cover and let simmer until potatoes are
tender- about 1/2 hour.
COUNTRY STYLE BEEF &
MACARONI
8 oz elbow macaroni 2 tablespoons margarine 2 medium onions,
diced 1 clove garlic 1lb. ground chuck 1/2 tsp chili powder 1
can kidney beans 1 package frozen peas salt and pepper to taste
Cook and drain macaroni. Melt margarine and add next 4
ingredients. Cook over med heat until beef is browned. Add macaroni
and remaining ingredients, mix well and heat to serving temperature.
CRAB
IMPERIAL
1lb. crabmeat 1/2 tsp mustard 1/2 cup mayonnaise juice of one
lemon 1/4 tsp bay food seasoning or hot red pepper or Tabasco with
Worcestershire 2 tablespoons butter
Flake crabmeat and add rest of ingredients. Cover with bread
crumbs and grated cheese. Bake in a casserole 350 for 40 minutes.
